Beneath the Cerro Calderico, with its windmills and the castle of La Muela, Consuegra celebrates the saffron crocus each autumn, the purple flower that appears across La Mancha from late October to early November.
What grows here
Saffron is the red stigmas of Crocus sativus. The flowers are hand-picked early in the morning and the stigmas removed one by one, a task called the monda, before toasting. Little saffron is grown in Consuegra today, so a visit centres on the festival and its saffron-peeling (monda) contest rather than on the fields.

Did you know?
The festival has been held since 1963 and includes the 'Milling of Peace', when wheat is ground in the Sancho windmill on the Cerro Calderico. Twelve of the hill's original thirteen windmills still stand.
